Signature Salad Selections

Caesar Salad – Garden fresh romaine lettuce, shaved parmesan cheese, and large seasoned croutons tossed with a traditional full flavored Caesar dressing.

Garden Salad – Crisp cucumbers, vine ripened grape tomatoes, baby carrots, multicolored peppers, slivered red onions, and sliced mushrooms layered between mixed garden greens and shaved parmesan cheese. A choice of dressing selections to be served on the side.

Harvest Salad – This starter is prepared with dried cranberries, candied nuts, gorgonzola cheese, slivered red onions, and poached pears. Then gently dressed with Dijon vinaigrette and served over mixed greens.

Bountiful Berry Salad – Ripe garden fresh raspberries, blueberries, blackberries, and quartered strawberries are decoratively placed upon mixed greens with candied pecans and creamy goat cheese. Light vinaigrette may be drizzled over the top, or served on the side.

Wedge Salad – Crumbled bleu cheese, Heybeck’s own hickory smoked bacon, slivered red onions, finely diced yellow peppers, and halved grape tomatoes garnish wedges of crisp iceberg lettuce. Bleu cheese and bacon dressing finish off this show stopper.

Italiano Salad – Halved vine-ripened grape tomatoes, petite fresh mozzarella cheese, slivered red onions, coarse cut fresh basil, and toasted pine nuts adorn over this mesculine salad. Served with Balsamic Vinaigrette and optional: paper-thin sliced prosciutto ham.

Meeske’s House Salad – Mixed greens with dried cranberries, Fuji Apples, creamy goat cheese, toasted pine nuts, and fresh herbs are tossed with light vinaigrette.

VEGETABLE ACCOMPANIMENTS

Green Beans Almandine – Sautéed with rendered bacon and garnished with slivered almonds.

Sautéed Garden Vegetables – a medley of baby carrots, green beans, mushrooms, cauliflower, broccoli, multicolored peppers, and squashes.

Sautéed Asparagus – garnished with roasted pecans and asiago cheese.

Glazed Carrots – with a maple brown sugar glaze.

Sautéed Broccoli – with shaved parmesan cheese, roasted garlic, and toasted pine nuts.

Grilled Vegetable Platter – An array of multicolored peppers, carrots, red onions, mushrooms, asparagus, zucchini and yellow squash, and egg plant tossed with olive oil, minced garlic and fresh herbs, then individually grilled to perfection.

Starch Selections

Roasted Petite Red Skinned Potatoes seasoned with butter, olive oil, minced garlic, herbs, and salt and pepper.

Twice Baked Potatoes with creamy Muenster cheese and Heybeck’s own hickory smoked bacon.

Red Skinned Mashed Potatoes with roasted garlic.

Whipped Yukon Potatoes with an optional addition of goat cheese.

Mashed Potato Bar seasoned mashed potatoes with our hickory smoked bacon, grated 4 year old extra sharp cheddar cheese, sour cream, and diced green onion toppings.

Midwest Medley of Multigrain and Wild Rice – A flavorful blend of dry roasted wild rice, brown rice, golden barley bulgur wheat, and red bell pepper with a garlic peppercorn seasoning.

Rustic Meadow Rice Blend – An artful blend of dry roasted wild rice, toasted orzo, couscous, green split peas, and black quinoa with an herb seasoning.

Homemade Sage Stuffing with sautéed onions and celery.

Homemade Apple – Almond Stuffing with slivered toasted almonds, seasoned apples, and sautéed onions and celery.

Barbequed Baby Back Ribs – Slow cooked and prepared with Heybeck’s own barbeque sauce.

Grilled Bone-In Pork Rib Chops – frenched and served with escalloped apples with a brown sugar glaze.

Jumbo Shrimp Skewers lightly seasoned and grilled with a spicy garlic rub, or mango chutney. Smaller skewers may be assembled to achieve a side dish portion.

Grilled yellow-finned Tuna served with a fresh tomato- basil relish.

Norwegian Salmon fillet lightly seasoned and grilled, then served on a bed of sautéed spinach, shallots, and goat cheese.

Stuffed Norwegian Salmon – a bed of spinach, jumbo lump crab, and lobster. Served with an herbed compound butter and a dill cream sauce

Chicken Picatta – Boneless, skinless chicken breast lightly seasoned with a butter caper sauce.

Caprese Salad – petite cut fresh mozzarella, slivered red onions, vine-ripened grape tomatoes, and coarse cut fresh basil leaves are gently tossed with Balsamic Vinaigrette.

Heybeck’s Own Loaded Potato Salad with bacon.

Heritage Cole Slaw – a bright and colorful slaw made with a flavorful vinaigrette, not mayonnaise-based. A much safer option for any outdoor summertime event

Fresh Fruit Salad – assorted melons, pineapple, grapes, strawberries, blueberries, blackberries, and raspberries make up this festive salad.

Fresh Fruit Platter – slices of assorted melons and pineapple arranged with grapes, strawberries, blackberries, blueberries, and raspberries. Platters can be designed to accommodate a party of any size.

Fruit Kabobs – alternating melons, pineapple, and strawberry decorate the 10 inch skewer. Also available with a dipping sauce
